Veggie Fritters:

Ingredients:

1 cup juicing waste (such as carrot pulp, celery scraps, and kale stems)

  • 1 cup whole wheat flour

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/2 teaspoon paprika

  • 1/2 teaspoon garlic powder

  • 1/4 cup chopped fresh herbs (such as parsley or cilantro)

  • 1/2 cup water

  • Olive oil, for frying

  1. In a large bowl, combine the juicing waste, whole wheat flour, baking powder, salt, black pepper, paprika, garlic powder, and fresh herbs.

  2. Slowly add water and mix until the batter is thick and well combined.

  3. Heat olive oil in a frying pan over medium heat.

  4. Using a spoon, drop small portions of the batter into the pan and flatten them gently with the back of the spoon.

  5. Cook the fritters on each side for about 2-3 minutes until golden brown.

  6. Remove from the pan and place on a paper towel to absorb excess oil.

  7. Serve the veggie fritters warm with a side of Greek yogurt or a homemade avocado dip.


Fruit Peel Tea:

Ingredients:

  • Water

  • Honey (optional)

  • Fruit peels from different types of citrus fruits (such as orange, lemon, and grapefruit)

  1. Rinse the fruit peels thoroughly to remove any dirt or wax.

  2. In a saucepan, add the fruit peels and water (ratio 1:3, for example, 1 cup of peels and 3 cups of water).

  3. Bring the mixture to a boil and then reduce the heat to low. Let it simmer for 15-20 minutes.

  4. Remove from heat and strain the peels from the liquid.

  5. If desired, add honey to taste for a touch of sweetness.

  6. Serve the fruit peel tea hot or chilled. It can be enjoyed as is or with a twist of lemon for extra flavor.
